Mitch Banchik has been working in the restaurant industry his entire adult life. In 1991, shortly after graduating from NYU, he opened the iconic Down the Hatch after sensing a need for an inexpensive, collegiate nightlife establishment in the Village. "The Hatch" was an instant success and Mitch replicated the concept the following year with Mo's Caribbean (currently The Stumble Inn) on the Upper East Side.

In the 5 years following, Mitch opened Jake's Dilemma and The Gin Mill (on the Upper West Side) and Off the Wagon (in Greenwich Village). He then branched off in to real estate and purchased, renovated and sold numerous apartment buildings in Manhattan. He also purchased many of the buildings that his establishments have been operating from. In 2010 Mitch opened 2 more places in Greenwich Village, The 13th Step and 3 Sheets Saloon as well as 2 places in Chicago. He opened his 10th establishment, Hair of the Dog in October, 2012.
